CLASSIC TOMATO SANDWICH

* INGREDIENTS


° 1 ripe avocado, cubed

° 30 ml (2 tbsp.) Lemon juice

° 5 ml (1 teaspoon) Dijon mustard

° 30 ml (2 tbsp.) Canola oil

° 8 slices of soft white bread, toasted

° 2 large tomatoes, sliced

° 250 ml (1 cup) arugula

° Salt and pepper


* PREPERATION


In a blender or small food processor, mash the avocado to a smooth purée with the lemon juice and mustard. Salt and pepper. Drizzle in the oil and mix until creamy.

Brush each slice of bread with the avocado mixture. Distribute the tomatoes on half of the slices of bread. Salt and pepper. Garnish with arugula. Close the bread. Serve immediately.
