Fried Bologia and Egg Sandwich

 Bologna - Oscar Mayer, Bar S, Pyrex, or my favorite from Alex's Meat German Bologna.

 Bread - You can use any bread or try Texas Toast or My Kaiser Rolls.

 Eggs - store bought or farm fresh.

 American Cheese - Nothing melts better than American cheese!

 Salt pepper - to taste.

 Butter - Good quality butter for "toasting" bread.

 Garlic Salt - Sprinkle garlic salt on toast, yum!

 Toast bread or cake. You can toast the slices of bread in a toaster, but if you're using bread, I prefer toasting them in a dry skillet before cooking the bolognese and eggs. To do this in a frying pan or skillet, mix the optional butter and garlic salt and spread over each cake half. Then roast over medium heat until golden. Remove from fire and set aside.

 Fry the bolognese. In a large skillet or skillet, heat it to medium and add the bolognese slices in a single layer (usually 3-4 slices at a time). Cook, first side, until golden and slightly browned, about 2 minutes. Flip and cook reverse side for a minute, until golden as well. Remove from heat and set aside (repeat if necessary).

 Fry the eggs. Crack your eggs into a frying pan or skillet over medium heat. Break the yolks if desired, season with salt and pepper, and cook until the whites are firm enough to stir, or about 3 minutes.

 Flip and add cheese. Flip and cook reverse side for 1 minute, add cheese slices and cover. Cook for an additional 30 seconds, then remove from heat and combine the fried eggs and the bolognese.

 Assemble the sandwich. Put the fried bologna on the bottom slice of bread or bread, cover with the egg and melted cheese, then close with the second slice of bread or half of the bread. Serve it immediately and enjoy it.
