Homemade Turtle Candy With Pecans and Caramel

 





*What you will need

°12 ounces soft caramel
°6 oz pecans (halves, toasted)
°8 oz chocolate 

*How to do it

Prepare a cookie sheet by lining it with aluminum foil or parchment and spraying the foil or parchment with nonstick cooking spray.
Oganize pecans in clusters of 4 with every pecan pointing in different direction Alternatively, you can just lay them in small clusters on the baking sheet.
Unwrap the caramels if they are wrapped and place them in a microwave-safe bowl. If they are very stiff, add a spoonful of water to make the final product softer.
Let the caramel cool slightly, so it's not very hot, then use a spoon or teaspoon to drop a dollop of caramel into each cluster of pecans. They're meant to be a hardy candy, so don't worry about keeping turtles round or having a few pecans to go through.
Melt the chocolate chips in the microwave or in a double boiler. Pour the melted chocolate over the caramel layer, letting it drip down the sides and swipe it to completely cover the top of the caramel.
Place the candy baking sheet in the refrigerator to completely set the chocolate and caramel, for at least 30 minutes. For great taste & texture, serving turtle at room temperature. Extras can be stored in an airtight container in the refrigerator or at room temperature for up to two weeks.
