Brown Butter Pecan Cookies



°1 cup organic cane sugar

°2 tbsp. baking powder

°1/2 tsp. vanilla extract

°2 cups organic raw pecans

°1/2 c organic coconut oil

°3 tbsp. water

°1/2 cup organic raw hazelnuts

°1/2 cup organic chocolate chunks

°1 very ripe banana, mashed

°2 cups spelled flour or all-purpose gluten-free flour

°1 C. tablespoons organic whole chia seeds


Preheat oven 160°C (325°F) & line a baking sheet with paper.

In bowl, blend the flour, sugar & baking powder.

In a separate bowl, combine 1 cup pecans, coconut oil, chia, water and vanilla until well combined.

Mixing dry ingredients with wet ingredients.

Add the remaining pecans, hazelnuts, chocolate chips and banana until smooth.

Drop 1 large spoonful at a time of the batter onto the prepared baking sheet. Leave space between each as the cookies will puff up.

Place in the preheated oven on the center rack and bake for 15 to 20 minutes.

Remove from oven and let cool at least 30 minutes before transferring to a cooling rack.
