Peach-cobbler POUND CAKE

 



*Ingredients filling :


° 3 large peaches or 2 canned stone peache

° 4 tbsp butter

° 1/2 c brown sugar

° 1/2 c white sugar

° 1 t vanilla extract

° 2 t cinnamon

° 1 t nutmeg

° 1/2 c orange juice

° 2 t cornstarch

+Ingredients cake batter:

° 3 c flour

° 3 c sugar

° 5 egg

° 1 1/2 c butter

° 2 t of cinnamon

° 1 t of nutmeg

 ° 1 teaspoon of baking powder

° 1 cup whole milk

° 1 teaspoon of vanilla

° 1 t almond extract


* Methods :


Preheat oven 350. Placing all ingredients for the peach filling in saucepan and slowly bring to a boil. Once it starts to thicken, turn off and let cool. Next, butter and flour a large tube tin set apart. In a bowl, combine flour, baking powder, cinnamon, nutmeg and set apart. In bowl, cream sugar and butter then add the eggs 1 by 1.

Adding vanilla and almond extracts. Alternate flour mixture and milk in the batter until well blended. Do not overmix! Next, place half of the batter in the pan, then add the peach mix around layer, leaving some to top the cake at the end. Placing rest of the dough on the peach mixture and put in the oven for 1 hour 15 minutes… use the toothpick method to detect cooking. Leave to cool for 30 min then invert onto a platter also garnish with the remaining peach cobbler filling.
