Sausage Shrimp chicken Gumbo Pot Pies

 



Ingredients:


2-yellow onions 🧅 chopped (save ends for stock)

3-stalks celery chopped (save ends for stock)

1-bunch green onions chopped (save ends for stock)

4-cloves garlic 🧄 minced (save ends peelings for stock)

1-bell pepper 🫑 chopped (save ends for stock)

2- lbs smoked sausage sliced

2-cups chicken 🐓(rotisserie or leftover Turkey ) (save small pieces, bones and skin for stock)

2-lbs fresh shrimp 🍤 shelled (save shells for stock) deveined marinate with 1-tsp shrimp boil liquid (optional) or crawfish tails (shelled) save shells for stock!

2-cups fresh okra chopped

1-lb crab 🦀 claws (save shells for stock) or crab 🦀 meat,drained (add juice for stock)

2-tbsp Cajun seasoning

1-tsp salt 🧂 and pepper

1-tsp garlic and onion powder

1-tbsp old bay leaves 🍃 seasoning

1-tsp fili gumbo seasoning

2-bay leaves 🍃

4-5 cups water 💦

Stock directions:

In large pot, add vegetable ends, shrimp or crawfish shells, chicken bones and skin, add 8 cups of water, boil until reduced to 6 cups, about 1-hour, strain.

Roux ingredients:

1-cup canola oil

3/4 cup flour


Roux directions:


In large cast iron pan add heat on medium heat, stirring constantly until roux is a deep dark chocolate color, about 1 hr.

Add chopped vegetables, (peppers, celery and onions) continue to simmer and stir for 10- mins, add garlic and sausage, simmer until sausage is browned,

Add 6- cups seafood stock and chicken simmer for 5 mins, add seasonings and water, bring to a boil, reduce heat, cover and simmer for 2-hours.

In a large skillet, add 1-tbsp canola oil and okra, sauté until lightly browned, add to simmering gumbo, at about 1.45 mins add shrimp, crawfish and crab, bring to a boil, skim fat off top, serve over rice, enjoy!

For Gumbo pies 🥧

Layer pastry dough in muffin tin, fill with gumbo with rice 🍚 in pastry, top with pastry dough.

Baste with egg 🥚 wash, bake at 350* F until golden browned.

Chef note:

Be patient with the roux, takes the time it takes, also, your roux stops browning when you introduce vegetables, so get the color (dark chocolate color) you desired before you add them!
