OLD-FASHIONED ORANGE CANDY

*Ingredients:

°1 can (6 oz) fruit pectin

°3/4 cup water

°half teaspoon baking soda

°1/4 cup sugar, divided

°1 cup light corn syrup

°2 tsp orange extract

°five drops each: red and yellow liquid food colouring

* Methods

-Spray a 9" x 5" loaf pan with cooking spray;

-Sit down. In a medium saucepan, combine the pectin, water and baking soda (the mixture may foam).

-In a large saucepan, combine 1 cup of sugar and corn syrup.

-Cook over excessive heat for four minutes, or until the pectin mixture runs out and the sugar mixture comes to a full boil (boiling does not prevent bubbling while stirring), stirring often in each pot.

-Gradually add pectin mixture to boiling sugar mixture, stirring constantly. Cook for about one minute, stirring constantly.

-Keep it well away from heat. Food colouring is also added to the extract.

-Immediately pour into an organized pan. Let stand at room temperature for three hours or overnight until the pacifier cools and hardens.

-Sprinkle 1 cup of the last sugar on a large piece of wax paper.

-Flip sugar onto wax paper. Cut the fondant into 3/4-inch cubes, stopping occasionally to soak the knife in hot water.

-Soak sugar and caramel until evenly coated.

-Apply sheath to grid.

-Let it sit overnight at room temperature.

-Store in an airtight box at room temperature.

Enjoy !
