Bananas Foster Cheesecake

 



To make the Bananas Foster Cheesecake, you will need the following ingredients:


Produce:


4 ripe medium bananas


1 fresh banana, sliced


Refrigerated:


1 large egg yolk


3 large eggs


Condiments:


2 teaspoons of fresh lemon juice


Baking & Spices:


1 3/4 cups light brown sugar


4 teaspoons of ground cinnamon


1 teaspoon of ground cinnamon


1 tablespoon of cornstarch


5 tablespoons of powdered sugar


1/8 teaspoon of salt


1 teaspoon of pure vanilla extract


Snacks:


3/4 cup graham cracker crumbs


2 cups vanilla wafer cookie crumbs


Dairy:


3/4 cup unsalted butter


3 (8-ounce) packages of cream cheese


3/4 cup heavy whipping cream


1/4 cup sour cream


Beer, Wine & Liquor:


5/16 cup of dark rum


1 teaspoon of rum extract


Instructions:


Preheat the oven to 350°F (175°C).


In a bowl, mix together the graham cracker crumbs, 1/4 cup of brown sugar, and 1/4 cup of melted unsalted butter.


Press the mixture into the bottom and up the sides of a 9-inch springform pan.


In a separate bowl, beat the cream cheese and 3/4 cup of brown sugar until smooth.


Beat in the egg yolk and 3 eggs, one at a time.


Add the sour cream, cornstarch, salt, and vanilla extract and mix until well combined.


Pour the cream cheese mixture into the crust-lined pan.


Bake for 45-50 minutes or until the edges are set and the center is slightly jiggly.


Let the cheesecake cool completely.


Meanwhile, prepare the bananas foster topping by melting 1/2 cup of unsalted butter in a large skillet over medium heat.


Add the sliced bananas and cook for 2-3 minutes or until they are lightly browned.


Stir in the remaining brown sugar, cinnamon, lemon juice, and dark rum.


Cook until the sauce thickens, about 3-5 minutes.


Remove from heat and let it cool.


Spoon the bananas foster mixture over the cooled cheesecake.


In a separate bowl, whip the heavy whipping cream and powdered sugar until stiff peaks form.


Spoon the whipped cream over the bananas foster mixture.


Crush the vanilla wafer cookies into fine crumbs and sprinkle over the whipped cream.


Refrigerate the cheesecake for at least 2 hours or until firm.


Serve with additional sliced bananas and pecans, if desired. Enjoy!
