Cinna Bun Cake In The Oven

 



*Ingredients :


+dough

°1 cup (227 g) lukewarm milk

°2 large eggs at room temperature

°5 tablespoons (74 g) softened unsalted butter

°4 1/2 cups (539 g) King Arthur's Unbleached All-Purpose Flour

°1 3/4 teaspoons (11 g) salt

°1/2 c (99g) granulated sugar

°2 1/2 teaspoons instant or active dry yeast, or a 1/4-ounce box of Red Star Platinum Yeast

+filling

°1 cup (213 g) light brown sugar or dark brown sugar, packed

°3 tablespoons (21 g) of cinnamon

+icing

°3 ounces (85 g) soft cream cheese

°4 tablespoons (57 g) softened unsalted butter

°1 1/2 c (170g) confectioners' sugar

°1/2 teaspoon of pure King Arthur vanilla extract

To make the dough: weigh the flour. Or measure it out by spooning it gently into a cup, then sweep up any excess. Mix together and knead all of the dough ingredients—by hand, mixer, or bread machine—to make a soft, smooth dough.

Place the dough in a lightly oiled bowl, turn it to grease on all sides, cover the bowl, and let the dough rise until it nearly doubles in volume, 1 to 2 hours depending on the warmth of your kitchen. 

To fill and shape the donuts: Gently flatten the dough, and transfer to a lightly greased work surface. Roll out the dough into a 16" x 21" rectangle.

Spread the dough with a third of a cup of butter. Mix brown sugar and cinnamon and sprinkle evenly over the dough.

Take it one step further


Starting with a short end, roll out the dough into the tree trunk and cut into 12 strips.

Place the cake in a lightly oiled 9" x 13" pan. Cover skillet and let cake rise until almost doubled, about 30 minutes.

While the cakes are rising, preheat the oven to 400 degrees Fahrenheit.

Uncover cake and bake until golden brown, about 15 minutes. While the cakes are baking, make the icing.

To make the frosting: In a small bowl, whisk together the cream cheese, butter, sugar, and vanilla.

Take the bread out of the oven. Spread the icing on the cake while it is warm.

Serve the cake hot or at room temperature. Wrap in plastic and store at room temperature for a day or so; Freeze for longer storage.
