- Flour: 300 g (bread flour)

- Flour: 200 g (whole wheat flour)

- Yeast: 300 g (wild / filtered)

- Water: 2 tablespoons

- Salt: 2 teaspoons

How to prepare

Mix the bread flour and wheat together, and sift them into a large bowl.

Pour the wild yeast into a bowl, then stir in the flour to form a soft dough.

Cover the bowl of flour tightly with a lid or plastic wrap, and let the dough rest for 30 minutes.

Put salt on the dough, then water and yeast and knead again, then cover the bowl again.

Leave the dough to ferment for about an hour, then lift the lid and roll the dough over itself.

Repeat this process four times over the next two hours, after that, let the dough rest until it doubles in size for about another two hours.

Sprinkle the flour on a flat surface, then turn the dough out of the bowl onto a floured surface.

Gently press the dough down into a loose rectangle, then fold the corners in on themselves, forming the dough into a ball.

Transfer the dough to the bread bowl and cover with a towel, then leave it for an additional two hours while pressing gently with the fingers of the hand on the dough, if the dough returns to the same shape, it is left again, and if the finger leaves a cavity, the dough is transferred to the refrigerator.

While the dough is refrigerated or left covered, heat a dutch oven pan to 500 F, and when the oven temperature reaches the necessary heat, cut into 12" x 12" parchment paper.

Turn the dough onto a parchment paper, then cut with a sharp knife.

Take out the Dutch oven from the oven, and carefully remove the lid.

Holding the edges of the parchment paper, gently slide the dough into the Dutch oven.

Cover the Dutch oven and put it back inside the cooker.

Reduce the oven temperature to 450 F and bake the dough for 30 minutes.

Lift the lid of the saucepan and continue to bake the bread for another 15 to 20 minutes or until golden brown.

Transfer to a cooling rack and let cool completely before slicing and serving.
