*ingredients :

°1 ripe avocado, diced

°30 ml (2 tsp) lemon juice

°5 ml (1 tsp) Dijon mustard

°30 ml (2 tsp) canola oil

°8 slices soft white bread, toasted

°2 large tomatoes, sliced

°250 ml arugula

°Salt and Pepper

* Preparation:

In a blender or small food processor, mash avocado until smooth, puree with lemon juice and mustard. Salt and Pepper. Drizzle with oil and mix until creamy.

Spreading every slices bread with avocado mix. Spread the tomatoes on half of the bread slices. Salt and Pepper. Garnished with arugula. Close the bread. Feet it right away.
