°2 - 2 pounds of potatoes
°2 tablespoons olive oil
°1 teaspoon salt
°Half a teaspoon pepper
°2 tablespoons butter*
°2 garlic cloves
°¾ c parmesan
°¼ c parsley
*Methods
Preheat oven to 400 degrees.
Peel the potatoes and cut them into matchstick strips, an inch wide and an inch thick.
Place the potato slices in a gallon zip-top bag and toss with olive oil, 1/2 teaspoon salt, and 1/2 teaspoon pepper.
Line two baking sheets with parchment paper.
Lay the potato slices in a single layer on each baking tray.
Bake the potatoes in a preheated oven for 30-35 minutes, flipping halfway through.
During the last 5 minutes of baking, heat the butter and garlic over medium heat in a small saucepan for 1-2 minutes, stirring constantly. When garlic begins to turn brown, remove from heat.
In a large bowl, combine potatoes, garlic butter, 1/2 teaspoon salt, 1/2 teaspoon pepper, Parmesan cheese, and parsley. Stir the potatoes until they are evenly covered.
Serve immediately and enjoy!
