Italian Chicken Bake



To cook the chicken:
°4 boneless, skinless chicken breasts (halve horizontally and pat dry with a paper towel)
°1/2 cup flour
°1 teaspoon salt
°Half a teaspoon of black pepper
°1 teaspoon garlic powder
°2 teaspoons Italian seasoning
°2 tablespoons olive oil
°12 ounces of spaghetti
°Parmesan sauce:
°4 tablespoons butter
°1 small yellow onion (or use 1/2 an onion), chopped
°4 garlic cloves, minced
°2 chopped green onions
°2 small tomatoes, cut into cubes
°1 tablespoon flour
°1 cup heavy cream
°1 cup water
°cup shredded parmesan cheese
°1 teaspoon Italian seasoning
°1/2 tsp salt
°¼ tsp crushed red pepper


Prepare the chicken breasts: Cut the chicken breasts horizontally to make them thin. Dried chicken with paper towel.
In a large bowl, combine flour, salt, black pepper, garlic powder, and Italian seasoning. Stir well to mix. Using a fork or tongs, coat the chicken breasts in the flour mixture by pressing them with tongs, then flip the chicken over to coat the other side. Sit aside.

cook chicken breasts: Heat 2 tsp of olive oil in  skillet on medium-high heat. Once the skillet is hot, place the floured chicken breasts in the skillet and cook for 4 to 5 minutes on each side, until golden brown on both sides and cooked through, flipping once between cooking, for 8-10 minutes.  Remove chicken from skillet and set aside.

Sauce: Add butter, diced yellow onion, and chopped garlic cloves to the skillet. Cook over medium-high heat until onion and garlic are translucent, about 2 minutes. Then add chopped green onions and tomatoes. Add 1 tablespoon of flour to the skillet and whisk until combined.

Now add heavy cream, water, Italian seasoning, salt, and red pepper flakes. Bring the mixture to a boil, then add ½ cup of shredded Parmesan cheese. Use a whisk or wooden spoon and mix until you get a smooth mixture.
Cook the pasta according to your package instructions in salt water. I like pasta that is neither too stiff nor too soft, so I always cook it Al Dente. Drain, but do not rinse.

Final assembly: Add the cooked pasta to the skillet with the sauce and stir until combined over low heat, 2-4 minutes. Return the chicken to the skillet over the pasta and allow it to heat up for an additional 5 minutes.
Serve chicken over or alongside pasta and sprinkle with Parmesan cheese if desired.
