Coconut Cake with Seven-minute Frosting

 



*Ingredients:


°1-1/2 c. sugar,


°2 tablespoons corn syrup,


°1/4 c water,


°6 egg whites,


°Teaspoon. vanilla


*Directions:


1- In a heatproof bowl of an electric mixer, mix all ingredients (except vanilla) and place bowl over a saucepan of simmering water.


2- Beat mixture until it reaches 160 degrees using a candy thermometer or instant read.


3- Transfer the mixing bowl to your stand mixer and, using the whisk attachment, beat on high until stiff, shiny peaks form (about 6 minutes).


4. Mix in the vanilla. Put the cake on immediately.


5- Enjoy !
