Cheesy Baked Asparagus


 


The easiest way to get asparagus into your diet is roasting them. Throw them on a baking sheet or tray and letting the oven work it’s thing. It doesn’t get any easier. But not everyone’s a fan of these green stalks! Coming up with ways for everyone to enjoy them can be a nightmare! That’s where this asparagus recipe comes in! You’re only four main ingredients away from having the best asparagus of your life!


Asparagus ✓


Garlic ✓


Olive oil ✓


Mozzarella Cheese ✓


Roast Asparagus Tips


Snap off the woody dry ends of the asparagus. A quicker way when cooking a large bunch like this is to snap the end off one first, then line them all up on your chopping board and slice through the rest at the same length.


Drizzle with a delicious olive oil/garlic mixture.


Roast! I roast these for only 10 minutes first to avoid over cooking them. Just make sure your oven is preheated!


Top with mozzarella cheese and broil (or grill)! You could use whatever cheese you have on hand here, preferably a nice mild melting cheese.


Ingredients


1 bunch of asparagus, woody ends trimmed…


3 T. butter, melted


1/2 tsp. my house seasoning (equal parts garlic powder, onion powder and pepper…combine and store in an airtight container)


1 T. grated parmesan cheese


3/4 C. shredded mozzarella cheese


italian seasoning


Directions


Line a baking sheet with some tinfoil. Place the asparagus on the baking sheet and drizzle with the melted butter. Sprinkle the house seasoning and parmesan cheese over the top. Place in a 400 degree oven for 15 minutes. Remove and top with the mozzarella cheese and a little sprinkling of italian seasoning over the top. Return to the oven for an additional 5-7 minutes to melt the cheese and let it begin to brown.
