These mini chicken salad sandwiches are super easy to make and they’re really good! Finally! A Chicken Salad Sandwich recipe that is loaded with flavor and perfect textures! This chicken salad features crisp red grapes, celery, salted cashews, and a blend of seasonings to elevate the flavor in this delicious sandwich! While you certainly can use home-cooked chicken as a base for this chicken salad recipe, you can also try timesaving options like starting with cold rotisserie chicken or fast-food fried chicken leftovers. No chicken? Turkey is always a tasty substitute.
Fresh-tasting and great for a get-together, this popular chicken salad could also be served on lettuce or a slice of cantaloupe or honeydew melon. When there will be kids in the crowd, I often substitute halved red seedless grapes for the peppers.
You’ll Need:
2 tbsps of fresh lemon juice.
½ cup of miracle whip.
1 tsp of salt.
1 tsp of pepper.
3 ½ cups of finely diced cooked chicken.
1 cup of finely diced celery.
12 mini rolls.
How to:
Mix together the lemon juice, miracle whip and salt in a small bowl.
In a medium bowl, toss the chicken with the lemon mixture and mix in the celery.
Serve the mixture in mini rolls, Voila!
