2 cups all-purpose flour

1/2 tsp baking powder

1/4 tsp salt

1 cup (2 sticks) unsalted butter, at room temperature

1/2 cup granulated sugar

1/4 cup powdered sugar

2 large egg yolks

2 tbsp grated Meyer lemon zest

1 tsp vanilla extract

Powdered sugar for dusting


Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a medium mixing bowl, whisk together the flour, baking powder, and salt.

In a separate mixing bowl, beat the butter, granulated sugar, and powdered sugar until light and fluffy.

Add the egg yolks, lemon zest, and vanilla extract to the butter mixture and beat until well combined.

Slowly add the flour mixture to the butter mixture, mixing until just combined.

Using a teaspoon or cookie scoop, shape the dough into small balls and place them on the prepared baking sheet.

Use a fork to press down lightly on each cookie to flatten them slightly.
