These Mini Boston Cream Donuts are a delicious take on the classic Boston cream pie. The donuts are made with a simple mixture of flour, sugar, baking powder, salt, milk, butter, egg, and vanilla extract. The cream filling is made of heavy cream, sugar, vanilla extract, and cornstarch. The chocolate glaze is made with chocolate chips and heavy cream. Ingredients:


Donuts:


2 cups all-purpose flour

1/4 cup granulated sugar

1 tsp baking powder

1/2 tsp salt

1/2 cup whole milk

2 tbsp unsalted butter, melted

1 large egg

1 tsp vanilla extract


Cream Filling:


1/2 cup heavy cream

1/4 cup granulated sugar

1 tsp vanilla extract

1 tbsp cornstarch

Chocolate Glaze:


1 cup semisweet chocolate chips

1/4 cup heavy cream


Instructions:


Preheat the oven to 350°F (175°C) and grease a mini donut pan.

In a medium mixing bowl, whisk together the flour, sugar, baking powder, and salt.

In a separate mixing bowl, whisk together the milk, melted butter, egg, and vanilla extract.

Slowly add the wet ingredients to the dry ingredients, mixing until just combined.

Carefully spoon the batter into the prepared donut pan, filling each well about 2/3 full.

Bake for 10-12 minutes, or until the donuts are golden brown and a toothpick inserted into the center comes out clean.

Remove the donuts from the oven and allow them to cool for 5 minutes before transferring them to a wire rack to cool completely.

To make the cream filling, whisk together the cream, sugar, vanilla extract, and cornstarch in a medium saucepan. Cook over medium heat, stirring constantly, until the mixture thickens.

Once the donuts are cooled, use a small knife or pastry bag to fill the center of each donut with the cream filling.

To make the chocolate glaze, melt the chocolate chips and cream together in a microwave-safe bowl, stirring every 30 seconds until smooth.

Dip the top of each donut into the chocolate glaze, allowing any excess to drip off.

Let the donuts sit for about 10 minutes or until the chocolate glaze is set.
