Zucchini Patties



°2 large courgettes (about 300g)

° 1 Onion or shallots

°1 garlic clove (optional)

°Aromatic herbs: flat leaf parsley, mint, basil or coriander

° 1 Egg

°1 tsp flour

°2 tbsp liquid cream (classic or vegetable)

°Salt pepper

°Babrika, Curry, Aspilite Pepper etc...

°Butter/oil for frying


Wash, dry and grate the zucchini. Place in a clean tea towel and squeeze well to remove the juice

Cut onions or leeks well and parsley

Mix with the grated zucchini, then add the cream and whole egg, mix, and finally flour, salt, pepper and spices, mix

Heat 20g of butter and a little sunflower oil in a pan and arrange small stacks of preparation, superficial in the form of pancakes and cook for 3 minutes on each side, until the pancakes are golden.

Put the pancakes on absorbent paper and serve very hot
