Best Ever Blueberry Cookies:


1/2 cup unsalted butter, softened

2 1/2 oz cream cheese, softened

3/4 cup sugar

1 egg

1 1/2 tsp vanilla extract

1 1/2 cups all-purpose flour

1 tsp cornstarch

3/4 tsp baking powder

1/4 tsp salt

4 oz white chocolate, chopped into small chunks

3/4 cup fresh blueberries

3 tbsp blueberry jam

1 tbsp powdered sugar


Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

In a large mixing bowl, beat the softened butter and cream cheese until light and fluffy, about 2-3 minutes.

Add the sugar, egg, and vanilla extract, and beat until well combined.

In a separate mixing bowl, whisk together the flour, cornstarch, baking powder, and salt.

Gradually add the dry ingredients to the wet mixture, mixing until just combined.

Stir in the white chocolate chunks and blueberries.

Use a cookie scoop or spoon to form balls of dough, and place them onto the prepared baking sheet.

Bake for 10-12 minutes, or until the edges are lightly golden.

Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

In a small saucepan, heat the blueberry jam over medium-low heat until melted.

Drizzle the melted jam over the cooled cookies.

Dust the cookies with powdered sugar before serving, if desired. Enjoy!
