Cheese Stuffed Taco Meatloaf using the ingredients you provided:


Ingredients:


2 ½ lb lean ground beef 90/10


1 ½ cup taco sauce, divided


⅔ cup crushed nacho cheese flavored Doritos, divided


1 1.25 oz packet taco seasoning


1 medium sweet onion, finely diced


1 teaspoon cumin


1 teaspoon lemon pepper


1 teaspoon garlic powder


1 teaspoon Mexican oregano


2 large eggs, beaten


1 8 oz block pepper-jack cheese, sliced into 14 even slices


1 cup shredded pepper-jack cheese


Instructions:


Preheat oven to 375°F.


In a large mixing bowl, combine ground beef, 1 cup taco sauce, 1/3 cup crushed Doritos, taco seasoning, diced onion, cumin, lemon pepper, garlic powder, and Mexican oregano.


Add beaten eggs to the mixture and combine well.


On a large sheet of wax paper or parchment paper, press out the meat mixture into a large rectangle, about ½ inch thick.


Layer the slices of pepper-jack cheese on top of the meat mixture, leaving a small border around the edges.


Using the wax paper or parchment paper, carefully roll the meatloaf up, starting from one of the shorter edges.


Place the meatloaf seam-side down in a 9×13 inch baking dish.


Spread the remaining 1/2 cup of taco sauce on top of the meatloaf and sprinkle with shredded pepper-jack cheese and the remaining 1/3 cup of crushed Doritos.


Bake for 50-60 minutes, or until the internal temperature of the meatloaf reaches 160°F.


Let the meatloaf rest for 5-10 minutes before slicing and serving. Enjoy!
