Classic Potato Salad


Classic Potato Salad using the ingredients provided:


8 medium Yukon gold potatoes, cooked and cut into bite-sized pieces

5 hard-boiled eggs, chopped

2 ribs celery, finely chopped

1/4 cup finely chopped onion

1 1/2 cups mayonnaise

1 tablespoon yellow mustard

1 tablespoon granulated sugar

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon celery seed

2 tablespoons apple cider vinegar

Paprika (optional), for garnish


In a large mixing bowl, combine the cooked potatoes, chopped eggs, celery, and onion.

In a separate mixing bowl, whisk together the mayonnaise, yellow mustard, sugar, salt, pepper, celery seed, and apple cider vinegar.

Pour the dressing over the potato mixture and stir until everything is well combined.

Cover the bowl and refrigerate the potato salad for at least 1 hour, or until it is chilled through.

When ready to serve, sprinkle some paprika over the top of the potato salad (if using) for garnish.
