Strawberry shortcake trifle*


 ingredients:


° 1 cup all-purpose flour, plus more for dusting

° 1.5 tablespoons of cornstarch

° 0.25 teaspoon of salt

° 0.25 teaspoon of baking soda

° 0.25 teaspoon baking powder

°6 tablespoons of unsalted butter

°0.75 cups of granulated sugar

°0.5 teaspoon lemon peel

° 2 eggs

° 0.75 teaspoon of vanilla extract

°283 grams of sour cream

° 1 pound fresh strawberries, diced, plus 12 pounds filled with garnish

° 45 grams of granulated sugar

°475 ml heavy cream

°170 grams of cream cheese

°90 grams of powdered sugar

In a mixing bowl, whisk together the flour, cornstarch, salt, baking soda, and baking powder and set aside.

In the bowl of an electric mixer fitted with the paddle attachment, cream the butter, sugar, and lemon zest until pale and fluffy.

Mix the eggs one by one, then mix in the vanilla.

Add 1/3 of the flour mixture and mix until combined, then add 1/2 of the sour cream and mix until just combined with the flour and sour cream again, then finish by mixing in the last 1/3 of the flour mixture and mix until combined (scrape the bowl to make sure it has a nice consistency equal). 

Pour the mixture and spread it evenly in the frying pan.

Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 18-22 minutes.

Remove from the oven and allow to cool completely on a wire rack. Once cool, cut into 24 rounds the size of candy cups.

Toss strawberry cubes with sugar (frozen strawberries cannot be used in this recipe, they are too wet and the flavor is not good!).

Let rest for 10 minutes. In a large mixing bowl using a handheld electric mixer, beat the heavy cream until soft peaks form.

In a separate medium bowl, mix the cream cheese until smooth, add the powdered sugar and vanilla and beat until light and fluffy.

Add the cream cheese mixture to the heavy cream and beat until stiff peaks form.

Place 6 rounds of cake into 6 fairly tall dessert cups. Add a spoonful of strawberries on top of each round cake.

Transfer cream mixture to pipette bag with large round tip and pipe cream mixture over strawberry layer.
