Ingredients:


2 large eggs


1/2 cup evaporated milk


2 cups unbleached all-purpose flour


2 tsp baking soda


1 cup packed brown sugar


1 1/2 cups granulated sugar


1 cup coconut


1 cup nuts (your choice)


1/2 cup unsalted butter


2 cups fruit cocktail, undrained


Instructions:


Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with cooking spray or butter.


In a large mixing bowl, beat the eggs until frothy.


Add in the evaporated milk, flour, baking soda, brown sugar, granulated sugar, coconut, nuts, and fruit cocktail, and mix until well combined.


Melt the butter in a small saucepan over medium heat, and then pour it into the mixing bowl.


Mix everything together until just combined.


Pour the batter into the prepared baking dish.


Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.


Allow the cake to cool in the baking dish for 10-15 minutes before transferring it to a wire rack to cool completely.
