Ingredients:


For the Oreo Crust:


24 Oreo cookies


1/4 cup unsalted butter, melted


For the Chocolate Cheesecake Filling:


16 oz bittersweet chocolate, chopped


2 lb cream cheese, at room temperature


1 1/2 cups powdered sugar


3 tablespoons cocoa powder


4 eggs


3/4 cup heavy cream


Instructions:


Preheat the oven to 325°F (160°C).


To make the Oreo crust, place the Oreo cookies in a food processor and pulse until they are finely ground. Add the melted butter and pulse again until well combined.


Press the Oreo mixture into the bottom and up the sides of a 9-inch springform pan. Use the bottom of a measuring cup to press the crust firmly into the pan.


In a heatproof bowl, melt the bittersweet chocolate in the microwave or over a double boiler. Set aside to cool slightly.


In a large mixing bowl, beat the cream cheese until smooth and creamy. Add the powdered sugar and cocoa powder and beat until well combined.


Add the eggs, one at a time, beating well after each addition.


Add the melted chocolate and heavy cream and mix until well combined.


Pour the chocolate cheesecake mixture into the prepared Oreo crust.


Bake for 50-60 minutes, or until the cheesecake is set around the edges but still slightly jiggly in the center.


Remove from the oven and let cool to room temperature.


Chill the cheesecake in the refrigerator for at least 4 hours, or overnight.


When ready to serve, run a knife around the edge of the cheesecake to loosen it from the pan. Remove the sides of the springform pan.


Slice and serve chilled, garnished with additional Oreo cookies or whipped cream if desired.
