Easy Salmon Patties:


Ingredients:


1 (14.75 oz) can pink salmon, drained


1/2 cup breadcrumbs


1/4 cup minced onion


1/4 cup minced celery


2 tablespoons chopped fresh parsley


1 tablespoon lemon juice


1 egg, lightly beaten


Salt and pepper, to taste


2 tablespoons olive oil


Instructions:


In a mixing bowl, combine the drained canned salmon, breadcrumbs, minced onion, minced celery, chopped parsley, lemon juice, beaten egg, salt, and pepper.


Stir everything together until well combined.


Form the mixture into 8-10 patties, using your hands to shape them into uniform disks.


Heat the olive oil in a large skillet over medium-high heat.


Add the salmon patties to the skillet, working in batches if necessary to avoid overcrowding the pan.


Cook the salmon patties for 3-4 minutes per side, or until they are golden brown and crispy on the outside.


Remove the salmon patties from the skillet and transfer them to a paper towel-lined plate to drain any excess oil.


Serve the Easy Salmon Patties hot with your favorite dipping sauce or toppings, such as tartar sauce or lemon wedges.
