Ingredients:


1 and 1/4 cups milk


1/2 cup granulated sugar


1/2 cup neutral oil (such as canola or vegetable oil)


1 tbsp lemon juice or apple cider vinegar


1 tbsp active dry yeast


2 large eggs


1 egg yolk


1 tsp fine salt


5 cups all-purpose flour


1 tbsp water


2 tsp oil for greasing bowl or container


Instructions:


Heat the milk in a small saucepan until it’s warm but not hot, then transfer it to a large mixing bowl.


Add the sugar, oil, and lemon juice or apple cider vinegar to the bowl, and stir to combine.


Sprinkle the yeast over the top of the mixture, and let it sit for 5-10 minutes, or until it’s frothy.


Add the eggs and egg yolk to the bowl, and whisk until well combined.


Add the salt and flour to the bowl, and stir with a wooden spoon or dough whisk until a shaggy dough forms.


Turn the dough out onto a floured surface, and knead it for 5-10 minutes, or until it’s smooth and elastic.


Place the dough in a greased bowl or container, cover it with a damp towel or plastic wrap, and let it rise in a warm, draft-free place for 1-2 hours, or until it’s doubled in size.


Preheat the oven to 375°F (190°C).


Punch down the dough, and turn it out onto a floured surface.


Divide the dough into 24 equal pieces, and shape each piece into a ball.


Place the balls of dough on a greased baking sheet, leaving about 1 inch of space between them.


Cover the rolls with a damp towel or plastic wrap, and let them rise in a warm, draft-free place for 30-45 minutes, or until they’re puffy and almost doubled in size.


Brush the tops of the rolls with the water.


Bake the rolls in the preheated oven for 12-15 minutes, or until they’re golden brown on top.


Remove the rolls from the oven, and let them cool on the baking sheet for a few minutes before serving.
