°1 (14 3/4 ounces) canned salmon

°1/4 cup onion, finely chopped

°1/4 cup cornmeal

°1/4 cup flour

°1 egg

°3 tablespoons mayonnaise

*How to Make:

Open the salmon and drain well. Place the drained salmon in a mixing bowl and crumble evenly with a fork. Add onion, cornmeal, flour, mayonnaise and egg. Stir until blended. Shape mixture into patties the size of a medium burger or smaller. Cook in oil in a skillet over medium heat until golden on each side. Turn once while frying. Note: Mayonnaise helps the patties hold their shape and prevents them from being too dry.
