Cowboy Meatloaf and Potato Casserole


 


If you are very hungry today, you should definitely try the cowboy loaf.

Full of protein, starches, and fats, this casserole is a complete meal on its own.


I still recommend doubling the recipe. It's as scrumptious as it is addictive, so I'm sure you'll want more than just a slice.

Although the ingredient list is a bit long, fear not.

Plus, with items like pre-cooked mashed potatoes and packaged fried onions and bacon, it's a lot easier than you think.

It's not just for cowboys and cowboys, but for anyone who's really hungry.When I say this meatloaf is absolutely loaded, I suggest it. It's not just a meatloaf, but a delicious casserole.It has a wet and juicy meatloaf on the lowest and creamy mashed potatoes on top.

Think of it as a cross between American meatloaf and shepherd's pie.Oh boy, is that this the crossover you did not recognise you needed.


The meatloaf topping is flavored with sweet honey barbecue sauce and chili powder, giving it an amazing combination of sweet and savory with a kick.


*ingredients:


°1 lb. minced meat

°1 package of cooled mashed potatoes

°1/3 cup of rusk

°1/2 large onion, chopped

°1/4 cup barbecue sauce

°1 large egg

°2 tbsp. chili powder

°1 cup bacon bits

°1 cup of Mexican cheese mix

°Salt and pepper to taste


*Directions:


Preheat oven 375°F (190°C).

In a mixing bowl, combine ground beef, chopped onion, bread crumbs, BBQ sauce, eggs, chili powder, and salt and pepper to taste. Mix well until well blended.


Place the meat mixture into a well-greased 9x9-inch baking dish.


Bake in the preheated oven for 20 to 25 minutes or until the meatloaf is cooked through.

We take the dish out of the oven and drain the excess fat.

Prepare mashed potatoes according to package instructions.


Spread the cooked mashed potatoes over the meatloaf mixture in the baking dish.

Sprinkle the grated cheese and bacon bits evenly over the mashed potatoes.

Turn the oven off and return the dish to the oven for a few minutes, or until the cheese is melted and bubbly.


Serve and enjoy the delicious cowboy and potato dish!
