Doritos chicken casserole

Upgrade your Taco Tuesdays with this Creamy, Crunchy Chicken Doritos Casserole recipe! Layers of crushed doritos and creamy chicken topped with more doritos and cheddar cheese. The whole family will love this delicious recipe, and it's so much fun with Crunchy Doritos! Kids will love it!


°1 14.5 oz. Doritos chips package with nacho cheese, slightly mashed

°2 1/2 cups shredded cooked chicken

°1 13.25 oz. A can of black beans, washed and drained

°1 13.25 oz. 1 can of whole corn kernels, rinsed and drained

°1 1/2 cups grated Mexican cheese mix, divided

°1 10 oz. A can of chopped tomatoes with hot green peppers

°1 4 oz. Hot green pepper can be cut into cubes

°1 10.75 oz. A bowl of heavy cream of chicken

°1 8 oz. Sour cream in a jar

°1 tablespoon taco seasoning

*How to make :

Preheat oven to 350°F and grease a 9" x 13" baking dish with a little nonstick spray.

In a large bowl, combine chicken, black beans, corn, 1 cup Mexican cheese blend, diced tomatoes, green peppers, cream of chicken, sour cream, and taco seasoning. Mix until fully blended. 

Spread half of the lightly crushed Doritos chips in the baking dish, then pour the chicken mixture over the top and spread it in an even layer.

Bake in preheated oven for 20 mn.

Remove from the oven and top with the remaining Doritos and cheese. Return to oven and bake for another 5 to 7 minutes, or until cheese is melted and bubbly.

Remove from the oven and serve warm, garnishing with cilantro, if desired.
