Italian Drunken Noodles

*ingredients:


1 tbsp. olive oil (divided).

1 pound Italian sausage.

1 C. salt.

freshly ground pepper.

1/2 cup red, yellow and orange bell peppers.

1/4 cup finely chopped onion.

2 minced garlic cloves.

1 C. Italian seasoning.

1/2 tsp. red pepper flakes.

1/2 cup of white wine.

1 can (28 ounces) chopped tomatoes (undrained).

2 tbsp. chopped fresh parsley.

12 oz. Egg noodles.

In skillet, heat half the olive oil also brown Italian sausage. Once browned, set sausage apart.

In same skillet, heat remaining oil. Saute onions, peppers and garlic until fragrant. It usually takes about 3 min.


Pour white wine to pan also simmer to it has almost completely evaporated, allowing the flavors to center and concentrate.


Adding diced tomatoes, Italian seasoning, red pepper flakes, salt and pepper. Let this mixture simmer for about 10 minutes until the flavors blend and the sauce thickens slightly.


Return the browned Italian sausage to the pan with the chopped parsley. Mix well with sausage and parsley
