Ingredients:

2 eggs

2/3 cup white sugar

1 teaspoon vanilla extract

1/2 teaspoon lemon zest

1 cup all-purpose flour

1/2 teaspoon baking powder

1/2 cup unsalted butter, melted and cooled

Oven Preparation: Preheat your oven to 375°F (190°C). Grease and flour your madeleine molds or a madeleine pan.

Mix Wet Ingredients: In a mixing bowl, beat together eggs, sugar, vanilla extract, and lemon zest until the mixture is light and fluffy.

Combine Dry Ingredients: Sift together flour and baking powder in a separate bowl. Gradually fold this dry mixture into the egg mixture, stirring just until combined.

Add Butter: Gently fold in the melted butter, ensuring it's fully incorporated into the batter.

Fill Molds: Spoon the batter into the prepared molds, filling each about 3/4 full.

Bake: Place in the preheated oven and bake for 10-12 minutes, or until the edges turn golden and the tops spring back when lightly touched.
