Cobbler Ingredients: Pumpkin and Pecan
All-purpose flour, measuring 1 cup plus 3 teaspoons
2 tsps baking soda
Salt, 1/2 teaspoon; granulated sugar, 3/4 cup
a single teaspoon of cinnamon
Half a teaspoon of nutmeg-
half a teaspoon of spices
1/3 cup pureed pumpkin
quarter cup of milk
1 and 1/4 cups of melted butter or oil
3/4 tablespoons of vanilla extract
As for the Finishing Touches
half a cup of sugar, granulated
a half cup of brown sugar
pecans, chopped 1/4 cup
half a cup of really hot water
Cobbler Recipe: Pumpkin and Pecan
Get the oven hot, about 350 degrees.
Using a medium-sized bowl, combine the flour, baking powder, salt, sugar, and spices. Remove from the heat.
The pumpkin, milk, melted butter, and vanilla should be mixed together in a separate basin. Combine the dry ingredients with the wet until a thick batter forms. Fill a small, 8-inch, high-sided casserole dish with the mixture.
Dissolve the brown sugar, pecans, and sugar in a separate dish. Disperse evenly over the batter's surface. After you make sure the center is firm, bake it for 40 minutes and pour boiling water over it all, being careful not to stir. Make careful to put it on a baking sheet just in case it expands. Let it cool for 5 to 10 minutes before you eat it. Pair with more pecans and vanilla ice cream for serving.
