Algerian olive tagine

The olive tagine comes from the Algerian cuisine, and it is very delicious and tastes different. You must taste it. The following is an easy way to prepare the dish, which is green olives, chicken, broth, carrots and spices, which are cooked and fried and then placed in the serving dish and so the dish is ready.

Ingredients


    ¼ kilo green olives without seeds

    1 onion, finely chopped

    1 chopped carrot

    1 tablespoon vegetable oil

    ½ tablespoon butter

    2 chicken thighs

    Salt to taste

    ½ 1 teaspoon sugar

    Pinch of black pepper

    ½ teaspoon turmeric

    2 bay leaves

    To season the chicken:

    2 garlic cloves, crushed

    1 teaspoon butter

    Pinch of black pepper


How to prepare


    Put the olives in cold water, soak them in it, and change the water every 20 minutes, five times until the salt and bitter taste in them are gone.

    Put the chicken in a saucepan and put a pinch of salt, black pepper and turmeric on it, add oil, butter, half a cup of water and an onion.

    Put the pot on a high heat, cover and stir occasionally until the water dries up and the onions caramelize, and fry the chicken from both sides over a medium to low heat.

    Add the carrots, bay leaves, and two cups of boiling water, cover the pot, let the water boil, and the chicken to cook.

    We remove the chicken from the pot, add the olives to the broth, cover the saucepan, and leave it until the broth dries a little.

    During that, we put the chicken in the oven tray, and after mixing the garlic, butter and black pepper, brush the chicken with the mixture, then put it in the oven until it acquires a golden color.

    Before we turn off the heat on the olives, add sugar and stir for a minute.

    Put the olives with the broth in the serving dish, and on top of the roasted chicken in the oven, so that the olive tajine is ready.
