Peach cobbler cheesecake

Ingredients:


Crust:


1 1/2 cups graham cracker crumbs

1/4 cup granulated sugar

1/4 cup unsalted butter, melted

Filling:


24 oz cream cheese, softened

1 cup granulated sugar

3 large eggs

1 tsp vanilla extract

1 tsp lemon juice

1 cup sour cream

Peach Topping:


4 cups fresh peaches, peeled and diced

1/4 cup granulated sugar

1 tbsp cornstarch

1 tsp vanilla extract


Directions:


Preheat the oven to 350°F (175°C) and grease a 9-inch springform pan.

In a medium mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of the prepared pan.

In the bowl of a stand mixer, beat the cream cheese and sugar until smooth. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract and lemon juice.

Pour the filling into the crust, and smooth out the top.

In a separate bowl, mix together the diced peaches, sugar, cornstarch, and vanilla extract.

Spoon the peach mixture over the cheesecake filling.

Bake the cheesecake for 45-50 minutes, or until the center is just set.

Remove the cheesecake from the oven and let it cool completely.

Once cooled, refrigerate the cheesecake for at least 2 hours before slicing and serving.
