Stuffed Cabbage Rolls, also known as Golumpki, is a traditional Eastern European dish made with ground meat and rice wrapped in cabbage leaves, and then simmered in a tomato-based sauce. This recipe will make about 8-10 rolls and will take about 2 hours to prepare and cook.
Ingredients:
1 large head of green cabbage
1 lb ground beef or pork
1 cup cooked rice
1 onion, finely chopped
2 cloves of garlic, minced
1/4 cup chopped fresh parsley
1 egg
Salt and pepper, to taste
1 (28 oz) can crushed tomatoes
1 cup tomato juice
1/4 cup brown sugar
1 tsp dried basil
1 tsp dried oregano
1 tsp salt
1/2 tsp black pepper
Directions:
Bring a large pot of water to a boil. Carefully remove the outer leaves of the cabbage, and blanch them in the boiling water for about 2-3 minutes or until they are pliable. Drain and set aside.
In a large mixing bowl, combine the ground beef or pork, rice, onion, garlic, parsley, egg, salt and pepper. Mix well.
Place a heaping spoonful of the meat mixture in the center of each cabbage leaf. Roll the leaf around the filling, tucking in the sides as you go.
In a large pot or Dutch oven, combine the crushed tomatoes, tomato juice, brown sugar, basil, oregano, salt and pepper. Bring to a simmer.
Carefully place the cabbage rolls in the pot, seam-side down.
Cover and simmer for about 1 hour and 30 minutes or until the cabbage is tender and the meat is cooked through.
Remove the cabbage rolls from the pot and let them cool for a few minutes before serving.
