Banana Cake with Cream Cheese Icing:


For the cake:

3 large ripe bananas, mashed

1 1/2 teaspoons lemon zest

3 large eggs

2 3/4 tablespoons lemon juice

1/2 tablespoon baking soda

1/2 cup packed brown sugar

3 cups all-purpose flour

1 cup granulated sugar

1/2 teaspoon salt

1 teaspoon vanilla extract

1/2 cup unsalted butter, softened

1 1/2 cups whole milk

For the cream cheese icing:

8 ounces cream cheese, softened

1/2 cup unsalted butter, softened

3 cups powdered sugar

1 teaspoon vanilla extract


Preheat the oven to 350°F (175°C). Grease and flour a 9×13 inch baking dish.

In a large mixing bowl, combine mashed bananas, lemon zest, eggs, and lemon juice.

Add baking soda, brown sugar, flour, granulated sugar, salt, vanilla extract, butter, and milk. Mix until well combined and smooth.

Pour the batter into the prepared baking dish and bake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Remove the cake from the oven and allow it to cool completely on a wire rack.

While the cake is cooling, make the cream cheese icing. In a large mixing bowl, beat together cream cheese and butter until smooth and creamy.

Add powdered sugar and vanilla extract. Beat until well combined and fluffy.

Once the cake has cooled, spread the cream cheese icing over the top. Serve and enjoy!
