Fajita Steak

*ingredients

 

°1 pound sirloin (rump, loin, rib eye, sirloin or round sirloin - thinly sliced)

°1 large onion (white or red, sliced)

°3 sweet pepper (I use a mixture of green, red, yellow or orange - sliced)

°1 teaspoon garlic (chopped)

°¼ cup cilantro (chopped)

° ½ jalapeno (sliced - optional)

° ½ teaspoon chilli powder

° 1 teaspoon of smoked paprika

° 1 teaspoon of cumin

° ½ teaspoon salt and pepper (to taste)

°1 lemon (zest and juice)

°2 tablespoons olive oil (extra virgin)

°Flour tortilla 8° (see recipe)

Preheat oven 400°F (205°C). * You can cover the baking tray with aluminum foil for easier cleaning!

Add the sliced beef, peppers, onion, minced garlic, cilantro and optional jalapeño to the griddle. Sprinkle seasoning over fajita mix ingredients (chili powder, smoked paprika, cumin, salt and pepper).

Grate and squeeze the lemon onto the baking sheet, then drizzle with olive oil and toss to coat all the ingredients. Spread the mixture of fajita strips on the baking sheet.

Place in oven to bake at 400°F (205°C) for 10 to 12 minutes, or until vegetables are tender and meat is browned on the outside. Take it out of the oven as soon as it is cooked and serve it on a tortilla.
