Ground Beef And Peppers Skillet

My mom used to make the best beef with peppers and onions recipe and it was always so delicious, I always looked forward to it.

It's really easy to do.

If you look at the stuffed pepper ingredients separately, it doesn't look that exciting. Peppers, ground beef, rice, cheese...

But somehow, when you combine them, magic happens and it becomes something greater (and tastier) than the sum of its parts.

Stuffed Pepper Skillet is no different - it has the same flavorful synergy as stuffed peppers, but hey, there's no stuffing involved. It's a crispy version to achieve the same signature flavor quickly and with very little effort.

*ingredients

°1 chopped onion

°½ chopped red pepper

°½ chopped green pepper

°½ chopped yellow bell pepper

°2 teaspoons minced garlic

°½ teaspoon dried thyme

°½ teaspoon dried basil

°Salt and pepper to taste

°1 can of diced tomatoes

°2 cups beef broth

°⅔ Jim Rice

°1½ c cheddar cheese

*How to make :

Add the ground beef, onion and pepper to a skillet over medium-high heat on the stove. Cook until the vegetables are tender and the meat is completely browned. Drain off any excess fat.

Add the minced garlic, oregano, basil, salt and pepper to taste to the pan and stir until combined, stirring for an additional 30 seconds.

Add the tomato cubes, the meat broth and the rice.

Bring to a boil, then reduce the heat to a boil and cook, covered, for 20 minutes.

Sprinkle the cheese over the mixture, put the lid back on the pan and cook until the cheese melts.

Enjoy!
