Creamy cucumber salad

 



Cucumber salad is very tasty! I salt my cucumbers a little then I drain them. You should always drain the liquid from the cucumbers. Salt is what makes cucumbers tender and gives them a salty flavor. Tasty!


There are a few things that set this creamy cucumber salad recipe apart. She starts by salting slices of cucumbers and sweet onions, then lets them sit for an hour to dry.


The dressing is largely made up of mayonnaise (a large cup and a half) mixed with a little vinegar and dried dill, and the instructions call for the salad to be refrigerated for two hours before serving. Here's how it went when I tried this creamy cucumber salad at home.


You'll start by combining peeled and sliced cucumbers, sliced sweet onions, and sea salt in a large bowl, then cover with plastic wrap and let sit at room temperature for 30 minutes. Then you will transfer the mixture to a colander to drain the accumulated liquid, mix and leave for another 30 minutes to drain some more.


*Ingredients :


°2 large cucumbers, peeled and finely chopped

°1 sweet onion, finely chopped

°1 tablespoon of sea salt

°1 1/2 cups mayonnaise (add more if desired)

°2 tablespoons of vinegar

°1 tablespoon of white sugar

°1 teaspoon dried dill weed

°1 teaspoon garlic powder

°1 teaspoon ground black pepper


*Directions:


In a bowl, mix the sliced cucumber, the sweet onion and the sea salt. Covering bowl with cling film & leave to rest for 30 minutes.

Then, transfer the mixture to a colander placed over a bowl or sink. Let dry for 30 minutes, stirring occasionally, until most of the liquid is removed. Once drained, transfer the cucumber mixture to a large bowl.


In another bowl, mix mayonnaise, vinegar, sugar, dill, garlic powder and black pepper with a whisk until well blended. Pour this dressing over the cucumber mixture, making sure all the vegetables are well coated.

Cover the salad with cling film and chill in the refrigerator for at least 2 hours before serving.
