Mac & Cheese Stuffed Honey Barbecue Meatloaf:


Ingredients:


1 1/4 lb Ground beef, lean


2 Eggs, large


1 cup Bread crumbs


1 White onion, small


2 tsp Garlic powder


2 tsp Parsley, dried


1 tsp Italian seasoning


1 tsp Salt


1/2 tsp Black pepper


1/2 cup Honey barbecue sauce


1/3 cup Ketchup


2 tbsp Mustard, yellow


1 tbsp Honey


2 tbsp Brown sugar


1 cup Mozzarella cheese, shredded


1 cup Mac and cheese, creamy



Instructions:


Preheat the oven to 375°F (190°C).


In a large mixing bowl, combine ground beef, eggs, bread crumbs, chopped onion, garlic powder, dried parsley, Italian seasoning, salt and black pepper. Mix well.


In a separate mixing bowl, combine honey barbecue sauce, ketchup, yellow mustard, honey and brown sugar. Mix well.


Add half of the barbecue sauce mixture to the beef mixture and stir until everything is well combined.


Press half of the meat mixture into a loaf pan, making sure to press the mixture firmly and evenly into the pan.


Spread the shredded mozzarella cheese and mac and cheese on top of the beef mixture, leaving a small border around the edges.


Top the cheese with the remaining beef mixture, pressing down to seal the edges and making sure there are no gaps.


Brush the remaining barbecue sauce mixture over the top of the meatloaf.


Bake for 1 hour or until the internal temperature reaches 160°F (71°C).


Remove from the oven and let the meatloaf cool for 5-10 minutes before slicing and serving. Enjoy!
