Oatmeal cake

 



Oatmeal Cake:


Ingredients:


1 egg


3/4 cup old-fashioned rolled oats


1/2 cup all-purpose flour


3/4 teaspoon baking soda


1 1/2 cups brown sugar


1 teaspoon cinnamon


1/2 teaspoon nutmeg


A pinch of salt


1 teaspoon vanilla extract


3/4 cup whole wheat flour


1 cup sweetened coconut flakes


1/2 cup chopped pecans


1/2 cup butter, softened


1/4 cup half-and-half or whole milk


1 1/4 cups water


Instructions:


Preheat the oven to 350°F (175°C) and grease a 9-inch square baking pan.


In a large mixing bowl, whisk together the egg and rolled oats. Let sit for 10 minutes.


In a separate bowl, whisk together the all-purpose flour, baking soda, brown sugar, cinnamon, nutmeg, and salt.


Add the dry ingredients to the oat mixture, alternating with the whole wheat flour, until everything is combined.


Fold in the sweetened coconut flakes and chopped pecans.


In a small saucepan, melt the butter and whisk in the half-and-half (or whole milk) and water.


Add the wet ingredients to the batter and mix until well combined.


Pour the batter into the prepared pan and bake for 35-40 minutes or until a toothpick inserted into the center of the cake comes out clean.


Let the cake cool for a few minutes before slicing and serving. Enjoy!
